How to store your vanilla beans
Vanilla beans are cured, so if stored in an airtight environment, will keep for up to six months. Vanilla beans should feel plump and flexible, with a slightly waxy exterior.
To retain the natural oils in vanilla, wrap your beans in greaseproof paper, and then in foil or a zip-lock bag and store in the cupboard.
There is no need to refrigerate vanilla, and storing it in the fridge, or even cold climates, will cause the natural sugars in the beans to crystalize, which is sometimes mistaken for mould at the ends of the bean.
